Indian vegetarian dishes are world famous. Vegetarianism means such food which is based on plants and such things obtained from animals which do not give birth to any living being, like honey, milk etc. Today we are going to tell you about some vegetarian dishes made in Indian kitchen.

Yellow Arhar Lentil ( अरहरकीदाल )

Arhar dal is the pride of every Indian kitchen. After cooking it with turmeric and salt, seasoning of desi ghee, onion, tomato and red chilli is added to it, which enhances its taste. It is also called tadka dal.

kidney beans ( राजमा )

This is a famous Punjabi dish. It is also known as ‘Red Kidney’. It is made with onion, ginger, garlic, tomato and many spices. People like to eat it with rice.

Dal-Makhani ( दाल–मखनी )

This is also a Punjabi dish. Which is made with whole urad dal and gram or kidney beans. Onion, garlic, ginger, tomato and many spices are added to it. After cooking it is decorated with cream and green coriander.

Brinjal Bharta ( बैंगनभरता )

Brinjal is roasted, peeled, mashed and then onion, green chillies, green coriander and salt and spices as per taste are added. This is a popular Indian dish which people like to eat with arhar dal and rice.

Curry-Dumplings कढ़ी–पकौड़ी

This is the pride of Indian kitchen. Small puffy pakodas are made from gram flour and cooked in a spicy gravy of gram flour and curd. Kadhi is made in many states of India but the taste of kadhi is different in every state.

Aloo Ka Paratha ( आलू का पराठा )

Boiled potatoes are mashed and onions, green chillies, green coriander and spices are added to it. It is filled with salty crispy dough balls. Then it is rolled into rounds, baked thoroughly and fried. This dish tastes delicious with curd and pickle.

Spinach-Paneer ( पालक–पनीर )

पालक की पत्तियों को उबलते पानी में डालकर उसे निकालकर पीस लेते हैं। फिर उसकी मसाले के साथ ग्रेवी बनाकर उसमें पनीर के छोटे-छोटे टुकड़े डालकर पका लेते हैं। इसे चपाती या पूड़ी के साथ खाते हैं।
